Horseradish Smashed Potatoes


You'll Need

Potato masher or hand-held mixer


  1. Heat oil in large stockpot on MED-HIGH. Add garlic cloves; cook 3-4 min, until slightly browned.
  2. Add potatoes; stir. Add water to cover and 1 Tbsp salt; bring to simmer. Cover; simmer potatoes about 20 min, until soft. Carefully drain off water.
  3. Mash potatoes and garlic in stockpot with potato masher or hand-held mixer, starting slowly.
  4. Add horseradish sauce, chicken stock (you may not need entire amount), and thyme; blend well. Season with salt and pepper.
