Grilled Zucchini & Tomato Salad



  1. Preheat grill on MED-HIGH 10 min. Coat cleaned grill grate lightly with vegetable oil. Toss zucchini with basting oil; season with salt and pepper. 
  2. Grill zucchini 5-7 min, turning every 1-2 min, until grill-marked and soft but slightly crisp. Remove from grill. Cool.
  3. Dice zucchini into 3/4-inch pieces; add to bowl. Add tomatoes, vinegar, olive oil, basil, salt, and pepper; mix to combine. Serve with grilled ciabatta.
