Grilled Sweet Onion & Tomato Salad


You'll Need

8 metal grilling skewers


  1. Preheat grill on MED 10 min. Coat cleaned grill grate lightly with vegetable oil.
  2. Run two parallel skewers, approx 1 inch apart, through each slice onion, lollypop-style; brush with 1 1/2 Tbsp oil. Season with salt and pepper.
  3. Grill onions, turning once, 10-12 min, until streaked with grill marks.
  4. Transfer onions to cutting board; cool slightly. Remove skewers. Cut onion slices in half and place in serving bowl; toss to separate layers.
  5. Add tomatoes, basil, remaining oil and vinegar; toss.
