Grilled Mini Peppers & Stone Fruit Spinach Salad



  1. Preheat grill on HIGH 10 min. Clean grill with wire brush. Using soft cloth, coat grill grate with vegetable oil.
  2. Toss fruits and peppers with basting oil in bowl. Grill 6-8 min, turning often. Remove from grill when fruit is soft but not mushy and peppers are softened and nicely charred.
  3. Toss peppers and fruit with spinach in a large bowl. Season with salt and pepper. Drizzle with lemon olive oil and vinegar; toss. Transfer to serving platter.
