Grill-Roasted Peppers



  1. Preheat grill on HIGH. Grill whole peppers directly on rack, turning as skin blisters and chars, about 15 min.
  2. Transfer peppers from grill to large bowl. Cover with plastic; let sit 15 min.
  3. Remove and discard peel, core, and seeds from peppers. Slice peppers in 1/2-inch strips; place in serving bowl.
  4. Drizzle with basting oil and season with salt and pepper; toss gently.

Heat sources differ; times may vary. It is more important to look for even blistering, charring and loosening of skin around peppers, timing is secondary.
