You'll Need

Braising pan


  1. Heat olive oil in pan on MED-LOW, 1-2 min. Add bacon; cook 5 min.
  2. Add mirepoix; cook, stirring, 5-7 min, until soft but not browned. Add stock; bring to simmer.
  3. Stir in split peas, mix well. Cover. Simmer gently 50-60 min, until liquid has been absorbed and split peas are tender. Remove cover last 10 min to reduce liquid, if necessary.
  4. Stir in basting oil; season with salt and pepper.
  • Omit bacon to make this dish vegetarian. 
  • Serve this with chicken sausage.
