Grated Celery Root Salad with Fresh Lemon and Garlic Dressing



  1. Chop garlic finely; combine with lemon/lime juice and ume vinegar or salt.  Marinate 10-15 min.
  2. Peel celery root as garlic mixture marinates. Scrub it well; grate on box grater (as you would carrots). Set aside.
  3. Whisk olive oil into garlic mixture. Whisk in some black pepper, if you choose. Taste and adjust seasoning.
  4. Mix grated root with dressing.
Garnish with chiffonade shreds of fresh parsley, if desired.
