Grandma's Veggie Casserole


You'll Need

10x14x3-inch pan


  1. Preheat oven to 450 degrees. Spray bottom and sides of 10x4x3-inch pan with cooking spray. Spread 1 1/2 cups sauce on bottom of pan; top with zucchini slices, overlapping if necessary.
  2. Sprinkle bread crumbs evenly over zucchini; season with Tuscan seasoning and pepper. Top with fried peppers, then mushrooms. Sprinkle with basil. Top with remaining sauce.
  3. Bake, covered, 45 min or until zucchini is tender. Remove from oven; top with cheese. Return to oven; bake, uncovered, 2-3 min, until cheese melts. Let rest 20 min before serving.
