Glazed Beet and Orange Salad



  1. Cut beets into quarters, reserving juice; set beets aside. Combine reserved beet juice and orange juice in small saucepan. Whisk in vinegar and brown sugar until well combined. Bring mixture to boil on MED-HIGH.
  2. Blend water and cornstarch in small bowl; add to saucepan; stir. Bring to boil; remove from heat. Add sauce to reserved beets; stir well. Add 2 Tbsp mint; cover. Chill 1 hour. 
  3. Fold in oranges just before serving. Garnish with remaining mint.
