French Green Lentils



  1. Heat 1 Tbsp oil in large pan on MED. Add mirepoix and thyme; cook, stirring, 8 min.
  2. Add lentils and broth to pan; stir to combine. Reduce heat to MED-LOW; cover. Cook, stirring occasionally, 30 min, until lentils are tender.
  3. Remove from heat. Stir in vinegar, zest, and remaining oil. Season with salt and pepper.
