Farro with Mushrooms & Roasted Tomatoes



  1. Preheat oven to 400 degrees. Heat oil in pan on MED-HIGH. Add onion; cook, stirring, 2 min, until soft but not browned. Add mushrooms and farro; cook, stirring, 2-3 min, toasting farro. Add soy sauce and stock; stir to combine.
  2. Increase heat to HIGH. Bring to simmer; cover. Transfer pan to oven; bake, 35 min. 
  3. Remove from oven; let rest 10 min. Stir in roasted tomatoes and parsley.
