Dashi Eggplant



  1. Preheat oven to 450 degrees. Toss eggplant and basting oil in large bowl. Arrange in single layer on parchment paper-lined baking sheet.  
  2. Roast, 15 min; turn eggplant over. Roast, 8-10 min, until browned on both sides. 
  3. Heat dashi sauce and ginger on HIGH in pan; bring to simmer. Add eggplant and green onions; stir to coat.
