  1. Add shallots and olive oil to large pan on LOW. Cook, stirring, 5 min, until softened but not browned.
  2. Raise heat to MED-HIGH. Add peas, corn, cream, and thyme; stir to combine. Bring to a boil.
  3. Cook 5 min, until cream is reduced by one-third and slightly thickened.
  4. Add red pepper. Cook 1 min. Season to taste with salt and pepper.
