  1. Toss rice and mirepoix in microwave-safe dish; dot with shallot thyme butter. Cover with lid or plastic wrap; microwave on HIGH 4 min.
  2. Carefully remove lid (avoid steam); toss mixture. Microwave on HIGH 4 min, uncovered.
  3. Remove from microwave; season with salt and pepper. Add trail mix and parsley; toss to combine.
