Cornbread Apple Stuffing



  1. Preheat oven to 450 degrees. Heat oil in sauté pan on MED until oil faintly smokes. Add sausage; brown, breaking into small pieces while cooking, about 5 min.
  2. Add vegetables; cook, stirring, 2-3 min until soft. Add apples and broth; simmer until apples are crisp-tender, 2-3 min.
  3. Fold in cornbread crumbs, herbes, and parsley (mixture will be quite wet). Season with salt and pepper.
  4. Place in greased casserole; bake 30-45 min until lightly browned.
