Celery & Green Apple Slaw


You'll Need

Mandoline slicer


  1. Add 1 Tbsp lemon juice to a large bowl of water. (As you slice the celery root and apple, place the slices in this lemon juice-water mixture to prevent browning.)
  2. Slice celery root with mandoline using julienne blade.
  3. Quarter apple (leave skin on), discarding core. Slice quarters on mandoline using julienne blade.
  4. Whisk together creme fraiche, mustard, lemon zest, and remaining juice.
  5. Drain apple and celery root well.
  6. Toss apple, celery, and parsley together. Gently mix in creme fraiche mixture. Season with salt and pepper.
Chef Tips
Scrub celery root well.  Cut off the top and bottom of the bulb with a sharp knife; peel skin.
Garnish with extra lemon zest, pepper, and parsley.
