Cauliflower Vanilla Puree



  1. Add milk, water and 1 tsp salt to stockpot on HIGH; bring to a boil. As soon as liquid boils, add cauliflower. Return to simmer; stir. Simmer 10-15 min on MED-LOW, until fork-tender. Let cauliflower drain 10 min.
  2. Puree cauliflower and yogurt in blender or food processor in two batches for smoothest texture.
  3. Add puree to saucepan; season with salt and white pepper. Heat on LOW 5-10 min; stir in vanilla extract. Fold in green onions; serve.
