Cauliflower "Rice" with Quinoa & Farro


You'll Need

Stockpot, 13x9-inch baking dish


  1. Preheat oven to 350 degrees. Spray 13x9-inch baking dish with cooking spray; set aside. Melt butter in stockpot on MED. Add celery and onions, poultry mix, salt, and pepper; cook, stirring, about 10 min.
  2. Add farro and broth; bring to boil on HIGH. Reduce heat to MED-LOW; simmer 10 min.
  3. Add quinoa; cook 15 min. Add pecan blend and cauliflower rice; stir to combine. Stir in eggs. Pour mixture into baking dish. Bake, covered, 40 min. Uncover; bake 20 min.
