Cauliflower "Rice" Tabbouleh



  1. Heat olive oil in saute pan on MED-HIGH. Add cauliflower; season with salt. Cook, stirring, about 5 min until tender, being careful not to brown.
  2. Remove from heat; let cool to room temp.
  3. Add cauliflower, tomatoes, vinaigrette, parsley, and mint to bowl; toss to combine. Season with salt and pepper.
