Cauli-Creamed Spinach



  1. Heat olive oil in pan on MED-LOW. Add shallot, garlic, and salt. Cook, stirring occasionally, about 2 min, until soft but not browned.  
  2. Add cauliflower puree, pepper, and nutmeg; stir to combine. Increase heat to MED-HIGH. Cook, stirring occasionally, 3-4 min, until mixture begins to bubble.
  3. Add half of spinach to pan; stir until wilted. Add remaining spinach; stir until wilted. Season with salt and pepper.
