Carrot Puree



  1. Melt butter in braising pan on MED; add carrots. Stir to coat. Cook, uncovered 40-45 min, stirring every 5-7 min until carrots are soft and begin to caramelize.
  2. Add water and salt. Cover; cook 15 min on MED-LOW.
  3. Puree carrots in food processor until smooth.
