Brown Rice Quinoa with Mushrooms & Pistachios



  1. Squeeze sides of rice packages to loosen. Remove rice from packages; transfer to microwave-safe dish. Dot with truffle butter. Cover; microwave on HIGH 2 min.
  2. Heat oil in pan on HIGH, until oil faintly smokes. Add mushrooms; cook, stirring, 4-5 min, until browned. Add mushrooms to dish with rice; stir to combine. Cover; microwave on HIGH 1 1/2 min.
  3. Remove from microwave. Add pistachio blend, salt, pepper, yogurt, and tarragon; stir to combine.
