Braised Butternut Squash & Potatoes



  1. Heat butter in skillet on MED-HIGH until melted. Add squash, potatoes and onions; cook, stirring, 10 min, until browned. Add rosemary, mustard, and broth; stir to combine. Season with pepper.
  2. Bring to a boil; cover. Reduce heat to MED-LOW. Cook, simmering, 10 min, until veggies are tender. If vegetables are tender but still brothy, raise heat to HIGH and boil liquid, uncovered, until it reduces to a glaze.
