Food processor, braising pan


  1. Add onions, green and red peppers, and garlic to food processor. Pulse until finely chopped, but not fully pureed.
  2. Heat oil in braising pan on MED-HIGH, until oil faintly smokes. Add onion-pepper mixture. Bring to a simmer, then reduce heat to LOW.
  3. Add cilantro, salt, achiote packet, and cayenne pepper to mixture in pan. Add tomato sauce and adobo seasoning; stir. Cook on LOW 50-60 min, stirring occasionally, until mixture is reduced by a quarter. (The mixture should be very thick.)
