Savory Candied Ginger Sauce



  1. Flatten ginger carefully with side of knife; chop very fine. Set aside.
  2. Add 1 Tbsp butter to pan on MED-LOW; add shallots. Cook, stirring, 2-3 min, being careful not to brown butter and shallots. Add wine; increase heat to MED-HIGH. Cook, 8-10 min, until reduced to syrupy consistency.
  3. Add demi-glace; reduce heat to MED-LOW. Bring to simmer; add savory sauce. Add remaining butter, quartered, and ginger to pan. Heat to simmer.
