Parmesan Cream Sauce



  1. Melt butter in medium saucepan on LOW. Add flour and cornstarch; whisk to combine. Increase heat to MED-LOW. Cook, stirring occasionally, 3-5 min, until a nutty aroma develops. Whisk in nutmeg and pepper.
  2. Remove from heat. Slowly add milk and cream; whisking continuously to keep mixture smooth.
  3. Return pan to stovetop. Bring to simmer on MED. Stir continuously, watching carefully to prevent scorching. Cook 1 min; remove from heat. Whisk in cheese until melted; season with salt.
