  1. Heat oil in pan on LOW. Add mirepoix, bay leaf, and thyme; cook, stirring occasionally, about 10 min, until soft but not browned. Add flour; cook, stirring, about 7 min, until lightly browned. Do not over-brown. 
  2. Add half the stock to pan; whisk to combine. Add remaining stock; whisk to combine. Increase heat to MED-HIGH; bring to a boil. Cook, stirring, 1-2 min. Reduce heat to LOW; cook, simmering, 30 min. Remove from heat.
  3. Remove and discard mirepoix and bay leaf. Add butter; stir until melted. Season with salt and pepper. Serve immediately or chill until using.
