Shaker Basket


  1. Preheat grill on MED-HIGH 10 min. 
  2. Combine eggplant, squash, onion, peppers, and mushrooms; drizzle with 1 Tbsp basting oil. Season with salt and pepper; place in shaker basket. Grill until vegetables are tender, shaking occasionally, 5-8 min.
  3. Spread baba ganoush on bottom half of roll. Layer with grilled vegetables, spinach, and cheese.
  4. Drizzle remaining basting oil on top half of roll; add to sandwich.
