Yam & Baby Kale Salad



  1. Cook yams in large pot of boiling salted water until tender, 8-10 min.
  2. Drain yams; cool 10 min in single layer on baking sheet.
  3. Add pumpkin seeds to skillet on MED. Cook and stir until lightly toasted and crunchy, 5-7 min; watch carefully so as not to burn. Remove from pan; let cool.
  4. Combine yams, kale, chimichurri, mustard, and toasted pumpkin seeds in large mixing bowl. Season with salt and pepper.
