  1. Trim romaine, removing core and darker leaf tips. Wash; pat dry. Place in large bowl. Add dressing; toss lightly to coat leaves.
  2. Arrange on serving platter; season with pepper. Shave cheese with vegetable peeler to create large flakes; arrange on lettuce.
