Spinach Pine Nut Salad with Orange Vinaigrette



  1. Toast pine nuts in skillet on MED-HIGH, 1-2 min, until lightly browned. Let cool.
  2. Make vinaigrette: Combine vinegar, orange juice, and zest with mustard. Whisk while slowly adding basting oil. Season with salt and pepper.
  3. Place spinach, tomatoes, endive, and pine nuts in large salad bowl. Toss with vinaigrette. Season with salt and pepper.
