Spinach, Honeycrisp, and Walnut Salad with Dijon Mustard Vinaigrette



  1. Whisk together mustard, vinegar, brown sugar, salt, pepper, and olive oil in a large bowl. 
  2. Add spinach, peppers, apples, onion, to bowl; toss with oil mixture. Season with salt and pepper. Serve with goat cheese and walnuts.

Place apple slices in acidated water (water with lemon juice) to keep from browning.
