Southeast Asian Chicken & Mushroom Salad




  1. Make sauce: Add lime juice, brown sugar, hot water, shallots, fish sauce, and Sriracha sauce to bowl; whisk until combined and sugar is dissolved. Chill.
  2. Add mushrooms to large pot of boiling, salted water. Blanch 1 1/2 min; drain. Transfer to bowl of ice water. Drain; gently squeeze dry on paper towel. 
  3. Add mushrooms, chicken, pepper, cucumber, chili, green onions, tomato, herbs, shallot, sauce mixture, and lime juice to large bowl; toss to combine. Serve chilled.
