Rainbow Crunch Salad



  1. Add salad mix, spinach, peppers, beets, mint, and currants to large bowl; toss to combine.
  2. Heat sunflower, pumpkin, and sesame seeds and cumin in skillet on MED. Cook, stirring, 5-7 min, until lightly toasted and crunchy; avoid burning. Remove from pan; let cool.
  3. Add cooled seed mixture to veggies. Add dressing and salt; toss to combine.
Chef Tips
This recipe can be prepared ahead of time, up until the dressing is added. Simply add the dressing and season with salt prior to serving.
