Mushroom Sherry Vinaigrette Salad



  1. Add mushrooms, olive oil, and salt to skillet; cover. Heat on MED-LOW; stir occasionally. Cook 20 min until tender. Remove from heat; let cool.
  2. Drain oil from mushrooms with sieve, reserve 1 cup oil.
  3. Add reserved oil, vinegar, shallot, mustard, salt, pepper, and tamari to blender; mix until combined.
  4. Toss mache with desired amount of dressing. Gently fold in mushrooms.
Chef Tips
Use poached mushroom oil immediately and discard unused portions.
