Green Bean, Mushroom & Cashew Salad



  1. Blend garlic, cilantro, yogurt, lime juice, olive oil, salt, and pepper in food processor. Set dressing aside.
  2. Blanch green beans in large pot of boiling, salted water on HIGH 5-8 min until tender. Add pepper rings and mushrooms to stockpot; blanch 30-45 sec. Transfer all vegetables to bowl of ice water; drain well.
  3. Combine vegetables and dressing in large bowl; season with salt and pepper. Add cashews; toss to combine.
