Buffalo Portabella Salad


You'll Need

12-inch cast-iron skillet, mandoline


  1. Heat oil in 12-inch cast-iron skillet on HIGH. Add mushrooms; press down in skillet using spatula. Cook 5 min; turn over. Press down again; cook 5 min. Season with salt and pepper. 
  2. Turn off heat; allow skillet to cool slightly 1-2 min. Add sauce; stir to combine.
  3. Add lettuce, blue cheese dressing, and radishes to large bowl; season with salt and pepper. Toss to combine; top with mushrooms before serving.
Chef Tips
Press mushrooms with the back of a spoon while cooking to break into smaller shreds.
