Asparagus, Jicama, Red Pepper & Corn



  1. Add asparagus and red pepper to large pot of boiling, salted water; blanch 1 min. Add corn; blanch 30 sec. Drain; transfer veggies to bowl of ice water. Drain well. 
  2. Toss jicama, asparagus, pepper, corn, and basting oil in large bowl; season with salt and pepper.
Chef Tips
Frozen corn can be replaced with kernels from 2 ears fresh corn.
