  1. Add vinegar, oil, honey, and water to small bowl; season with salt and pepper. Whisk to combine; set aside.
  2. Slice fennel, radish, and beets thinly using mandoline. Add fennel, radishes, beets, romaine, kale blend, apple, tomatoes, cucumber, and lemon juice to large bowl; season with salt and pepper. Add dressing; toss to combine.
