Whole Wheat Pasta with Roasted Vegetables



  1. Preheat oven to 450 degrees. Toss eggplant, green pepper, red pepper, onion, garlic, zucchini, yellow squash, mushrooms, basting oil, and olive oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet.
  2. Roast, about 30 min, until veggies are tender and lightly browned. Remove from oven.
  3. Add cooked pasta, roasted veggies, and spinach to large bowl; toss until spinach wilts. Season with salt and pepper; top with tomatoes and shredded cheese.
