White Bolognese



  1. Heat 1 Tbsp olive oil in braising pan on MED-HIGH; add mirepoix. Cook, stirring, 5 min. Add rosemary, sage, and garlic. Cook, stirring, 5 min or until mirepoix caramelizes. Add pork; cook, stirring, 5-8 min, breaking it up to fine crumble. Stir in white wine.
  2. Reduce heat to MED. Add cooked pasta to pork mixture.  Add 1 cup hot pasta water to pan. Cook, stirring constantly until almost all liquid is absorbed and to create a sauce, 3-4 min  (if needed, add up to 1/2 cup more pasta water.)
  3. Reduce heat to LOW. Add 2 Tbsp olive oil to pan. Slowly stir cheese into sauce. Season with salt and pepper; garnish with parsley.
