Vegetable Stew



  1. Heat oil in 5-quart braising pan on MED. Add onions, garlic, and yams; cook 2-3 min until onion is softened. Add tomatoes; season with salt and pepper. Simmer 2 min.
  2. Add raisins and garbanzo beans; cover and simmer, stirring occasionally, 15 min. Stir in pepper and 1/2 cup water; simmer, covered, 5 min.
  3. Add zucchini; simmer, uncovered, 8-10 min until zucchini is tender. Remove from heat. Stir in cilantro just before serving.
