Tortellini with Spinach & Roasted Tomatoes



  1. Bring large pot of salted water to a rapid boil on HIGH. Add tortellini; cook, stirring occasionally 4 min. Add spinach; cook 1 min. Drain, reserving 1/2 cup pasta water.
  2. Return tortellini and spinach to empty pan. Add roasted tomatoes, pesto, and reserved pasta water. Combine; season with pepper.
  3. Sprinkle each serving with shredded cheese.
