Steamed Tilapia with Leeks & Mushroom Soy Sauce

Ingredients

You'll Need

Bamboo steamer

Directions

  1. Layer bottom of both bamboo steamer baskets with leeks. Season carrots and potatoes with basting oil and salt and pepper to taste. Place on top of leeks. Pour soy sauce over fish; season with pepper to taste. Arrange fish on top of vegetables. Stack baskets and cover.

  2. Heat broth in stir fry or tegame pan on HIGH to rapid boil. Broth must be hot enough to create steam below food, but must not touch it.

  3. Place layered baskets in pan. Steam about 12 min or until fish has reached internal temp of 130 degrees. To check temp, lift lid away from face (use extreme caution and avoid steam) and insert thermometer halfway into thickest part of fish. Carefully remove from heat. Let rest 2 min.

  4. Spoon on vegetables and broth. Garnish vegetables and fish with green onion.
Chef Tips
Wegmans Firm Tofu, halibut or sea bass can substitute for tilapia.
