Slow-Roasted Rib Roast



  1. Preheat oven to 275 degrees. Season roast evenly with basting oil, salt, and pepper. 
  2. Roast 25-28 min per lb, until desired doneness. (Refer to temp chart for final cooking temps). Check internal temp by inserting thermometer halfway into thickest part of meat without touching bone.
  3. Transfer roast to clean platter; let rest 20-30 min. Remove ribs and slice.


Chef Tips
No need to use a rack when roasting a rib roast.  The rib bones act as the rack.
