Slow-Cooked Thai Red Curry Chicken

6-8 qt slow cooker

Directions

  1. Add chicken and sauce to 6-8 qt slow cooker; stir to combine.
     
  2. Cover; cook on HIGH 3 hours or LOW 6 hours. Remove chicken and shred lightly with fork; set aside.
      
  3. Add peppers, mushrooms, and bok choy. Cover; cook 30 min. Add 10 basil leaves; stir until wilted. Stir in lime juice and chicken. Garnish with remaining basil leaves and lime wedges.
