Slow-Cooked Country Pork with Kielbasa and Sauerkraut

Ingredients

6-8 qt slow cooker, large braising pan

Directions

  1. Dust ribs with pan-searing flour; pat off excess; season with salt and pepper. Heat oil in pan on MEDIUM-HIGH, until oil faintly smokes.
     
  2. Add ribs, turning to brown all sides, about 2 min per side. Transfer ribs to slow-cooker. Add kielbasa and smoked ham slice to slow-cooker. 
     
  3. Add apples and onions to pan ribs were cooked in; reduce heat to MEDIUM. Season to taste with salt. Add caraway seeds and bay leaves. Cook, stirring, 2-3 min, until soft. Add sauerkraut and beer; bring to simmer 2-3 min. Transfer mixture to slow-cooker.
     
  4. Cook 4-6 hours on HIGH or 8-10 hours on LOW. Transfer to serving platter; remove bay leaves and kielbasa casing before serving.
