Slow-Cooked Charcuterie Berner


You'll Need

6-8 qt slow cooker


  1. Season roast with cracked pepper seasoning. Dust with pan-searing flour; pat off excess.
  2. Heat olive oil in large braising pan on MED-HIGH until oil faintly smokes. Add roast; sear, turning to brown both sides, 6-8 min. Remove from pan; transfer meat to slow-cooker.
  3. Discard all but 1 Tbsp drippings from braising pan. Reduce heat to MED. Add onions; cook, stirring occasionally, 5 min. Add cider; stir to loosen browned bits on bottom of pan. Add sauerkraut, caraway seeds, cloves, and bay leaf.
  4. Heat to simmering; transfer all to slow-cooker. Cook on HIGH 4-5 hours or LOW 5-6 hours.
  5. Stir in apples; top with pork chops and kielbasa. Cover; cook 1 hour, remove and discard bay leaf.
