Shrimp Scampi



  1. Dust shrimp with pan-searing flour; pat off excess.
  2. Heat oil in pan on MED-HIGH until oil faintly smokes; add shrimp. Turn over when edges change color about one-quarter of way up, 2-3 min. Reduce heat to MED. Cook, 2-3 min, until internal temp reaches 120 degrees (check by inserting thermometer halfway into thickest part of shrimp).
  3. Reduce heat to LOW; add garlic butter and parsley. Stir until melted, about 2 min. Let rest 2 min.
