Scallops with Carrot Puree


You'll Need

9x13-inch baking dish


  1. Preheat oven to 350 degrees. Spray 9x13-inch baking dish with cooking spray; set aside. Combine scallops and lemon pepper seasoning in small bowl; set aside.
  2. Add carrot puree, lemon butter sauce, and lemon juice to separate small bowl; mix to combine. Set aside.
  3. Add fennel, carrots, onions, spinach, basting oil, salt, and pepper to large bowl. Toss to combine; add to baking dish. Top evenly with scallops and then carrot puree mixture. Bake about 30 min until internal temp of scallops reaches 130 degrees (check by inserting thermometer halfway into thickest part of scallop).
